PECORINO ROMANO
Renommé et aux origines antiques, il a une saveur piquante plus ou moins intense selon l’affinage. La croûte est lisse, de couleur blanche tirant sur le jaune paille. La pâte est blanche, dure et compacte. Afin de sauvegarder son originalité et sa saveur particulière, il bénéficie depuis 1996 d’une AOP (Appellation d’Origine Protégée).
