Aged pecorino with black truffle veins
Truffle Pecorino Cheese
An outstanding aged pecorino injected with black truffle puree, with a grooved rind, yellow-brownish in color. The texture is compact, hard or semi-hard depending on the seasoning, laced with dark truffle veins that create a singular marbling effect. Unlike most truffle cheeses, here the truffle puree is infused on the texture only once the cheese has reached a satisfying maturing period, that confers a typical sharp, aromatic and slightly grassy taste, enhanced by the earthy musky notes of the black truffle. The result is a superb cheese with a strong, pungent, persistent but pretty balanced taste, with an elegant finish, that certainly deserves a refined meditation wine to be paired with.
