A delicate specialty made with 10% sheep's milk, which together with the blue mold gives the cheese a unique full-bodied and floral taste and a sweet and tangy aftertaste. Castello® Black is a specialty in blue cheese because of its sheep's milk content. The mold culture forms an even net throughout the cheese and settles as a blue-gray layer on the surface of the cheese, which over time can turn to a more reddish-brown color. As the cheese matures, it becomes creamier and develops a round, rich and piquant taste of blue, which is characterized by the added sheep's milk. Can be eaten on its own, with bread and crackers.
