Double cooking Pre-cooking: Cook the pasta 50% of the cooking time indicated on the packaging, in boiling salted water (7g/l), stirring time to time. Preservation: drain well with a colander, add a drizzle of vegetable oil (neutral taste) and blast chill to 4°C/39°F. Store refrigerate in a sealed container. Use at least 1 hour after the pre-cooking and up to 48 hours later. Final cooking: to serve, reheat the needed pasta in boiling water for 40 to 60 seconds. Drain and mix with sauce, completing the recipe. For rapid delivery Tip: If preparing pasta for rapid delivery, pre-cook 70% of the indicated cooking time.
