Wild sea bass is one of the more luxurious fish species but is not good for the whole year. In order to meet the high demand, the sea bass is intensively cultivated. Sea bass is usually grown in size 200/ 300 grams and 400 / 600 grams per piece. This is the most common sort for trade. Large cultured specimens are more difficult to obtain, because the sea bass grows slowly when it has passed the 600 grams. Farmed sea bass generally has a slightly more dull skin, and the fins are often somewhat dull, which is typical of farmed fish.
