Bluefin Tuna without head fresh AFM
The Bluefin tuna without head and tail. The Atlantic bluefin tuna is the largest tuna in the world. This can reach a length of 3.5 meters with a maximum weight of up to 700 kg. The Atlantic bluefin tuna is called 'Hon Maguro' in Japanese and is not an endangered species. The headless bluefin tuna we describe here is 'farmed', more accurately, a fattened specimen. Municipal bluefin tuna has a high fat content and is fatter and more intense than the originally wild variant. Bluefin tuna is a fast-growing fish if it grows up in ideal conditions, body weight can increase by 60% over a period of one year. Bluefin tuna is available without head and tail and without guts. The intestines are removed because they spoil the former and can seriously affect the fish meat. Bluefin tuna must have a mandatory ICCAT registration, without this documentation the tuna is illegal. Some tuna fattening goes a step further and adds a QR code system for product traceability. This makes the process fully visible. Date of catch, weight, fat percentage and even a microbiological report can be found through this system.
