This Indian spice melange, which takes its name from the city of Madras (Channai) in southern India, consists of a whole range of herbs and spices such as garlic, curry, sambal (spicy Indonesian condiment), ginger and cumin. The chilled Madras injects immediate flavour and is extremely versatile in use. Not only for classic Indian dishes, it works well as a flavour accent in purees and sauces.
