This chilled salsa is a mixture of chopped tomato, bell pepper and coriander. It is seasoned with jalapeño pepper, garlic and lemon juice. Pico de gallo is sometimes called a salsa fresca (fresh salsa) or even salsa mexicana because its ingredients have the same colours as the Mexican flag. This vegetable salsa, with its tangy-spicy flavour, is a great accompaniment for hot meat dishes and makes a lovely garnish for salads and sandwiches.
