Asian Fish Market (AFM) jumbo soft shell crab is a crab located at the scaling stage. This process is called ‘molding’. There are several sizes of the soft shell crab and in this case it is about the dimensions 90-110 gr. In the size jumbo sorting there are 12 pieces per kilo. As the crab grows, it grows out of z’n jacket and becomes time for a new jacket. The crab creeps out of the armor and is at that stage ‘soft’. This crab will be 18 x for the first 3 years and will be very vulnerable during that period. The Soft Shell Crab is actually 'soft' periodically and is therefore seasonal. The best soft-shell crab comes from the waters of Alaska to Argentina and is better known as the Blue Crab and has a strong resemblance to the Blue swimmer crab, which can also be obtained as a 'soft shell' variant. Once the molting has occurred, the Soft Shell Crab is frozen immediately. Fresh the Soft Shell Crab is not traded.
