Choux pastry filled with mousseline cream of almond and hazelnut praline, decorated with almond shavings

Ingrediënten

Almond-hazelnut praline mousseline cream (60.6%): water, vegetable fat (non hydrogenated vegetable oils and fats (palm oil, coco oil, rapeseed oil), water, emulsifiers: polyglycerol esters of fatty acids - mono- and di-glycerides of fatty acids, acid: citric acid), custard mix (sugar, modified potato starch, powdered WHEY, wheat dextrose, skimmed MILK powder, thickener: sodium alginate, stabilisers: tetrasodium diphosphate - calcium sulphate, colour: algal carotene), praline paste 6% (sugar, HAZELNUTS 1%, ALMOND 1%, stabiliser: sorbitol, emulsifier: SOYA lecithin), icing sugar (sugar, anti-caking agents: corn starch), HAZELNUT paste 2%.
Chou pastry (31.5%): whole pasteurized EGGS, flour GLUTEN, wheat GLUTEN), semi-skimmed MILK, water, butter (MILK), inverted sugar syrup, sugar, salt.
Decoration (7.9%): flaked ALMONDS 3%, coating (water, glucose syrup -wheat fructose, sugar, gelling agents: pectins-carrageenans, acids: citric acid - potassium phosphates - calcium citrates), icing sugar (sugar, wheat starch GLUTEN, cocoa butter).
