This dish originally comes from the southern Italian "Cucina povera”. Literally it means the "poor man's kitchen”. The idea behind this is to use ingredients to their fullest so that on the one hand nothing is wasted and on the other hand the taste is maximized. The seasoning with mint, among others, has its origins in the Moorish influences that this area has. The Caponata can be used as a basic tasty side dish, but can also serve as a topping for bruschetta. Its sweet and sour flavor and perfect balance of ingredients make it a versatile addition to any Italian dish.
