Masago ( orange ) is also internationally called capelin caviar. Masago is a Japanese name for the calf that originally comes from the melt. Melt is related to the sandeel and is found in the waters of the Baltic Sea and the northern Atlantic Ocean. Massago has a crispy texture with a pleasant bite. This masago is made from a mix of 45% capelin calf and 43% herring calf.
