Burrata is a fresh cheese, made from mozzarella and cream, typical of South of Italy. Burrata is named from its ingredients and its making process: a mix of mozzarella and cream that form a “buttery” cheese. This fresh cheese has an outside mozzarella shell made of cow’s milk, while inside contain a soft mixture of mozzarella scraps and fresh cream that gives to it a unique pulpy texture. Our people still make the mozzarella scraps by hands following the old tradition.
