Coarse chunks of grilled vegetables seasoned with herbs. Ratatouille consists of tomatoes, aubergines, courgettes, bell peppers and garlic. It is a typically French classic from Provence, usually eaten cold with bread. However, it can be used hot in fish dishes, casseroles, pasta dishes and as a garnish.
